Ever had soba noodles? Kind of like the texture of spaghetti but they are used in asian cooking. I found some healthier ones made of buckwheat (Annie Chun brand). They only take 5-6 min to boil. I used the whole package for our big fam of 7 (so half the recipe for smaller). In a pan, I steam sautéd 1 thinly sliced onion (basically “frying” with water and a little coconut oil, keeps the temperature lower and prevents burning which isn’t good for health, so it’s more steamed rather than fried). Added 4 cups cut up Egyptian spinach at the end (calls for normal spinach but that doesn’t grow in my garden during the hot months but Egyptian spinach loves the heat!) And the sauce was 6 tbsp sesame oil, 4 tbsp rice vinegar, 4 tbsp mirin (or use a sweet cooking wine), 3 tsp honey, 6 tbsp soy sauce, and 1 tsp fresh ginger (or I used 1/2 tsp powdered). I kind of threw it all together and stirred lol. Worked just fine! Garnished the top with crushed nori and sesame seeds. It was delish! I had a plate full (2 cups) and estimated 450 calories…you could skimp on the oil to make it less…..but then again….some things just shouldn’t be skimped!
